“Apples are 90 percent of the success of a charlotte. I always recommend three varieties. ‘Pepin Saffronny’ — dense, firm, as if specially made for a pie: it holds its shape and never falls apart in the dough. ‘Northern Sinap’ — sweet and sour, with a spicy note, its aroma fills the whole house. And ‘Bogatyry’ with snow-white, crispy, and juicy flesh,” said Yulia Radaeva.
Yulia recommends cutting the filling slices into small pieces, and whipping the eggs with sugar until stiff foam forms, so the dough turns out airy. It’s better to bake the pie on medium heat and not rush it — this way, the fruits inside have time to soften, and the top becomes golden brown. The hot charlotte can be served with a scoop of creamy or vanilla ice cream.
Varieties for different dishes
There are other apples at Moscow fairs that are suitable for baking and pies. “Antonovka” will add a distinctive tartness to the filling, “Strifel” will retain juiciness, and “Fuji” will make the dessert sweeter. The varieties “Slava Pobediteley” and “Medunitsa” have juicy flesh and a rich aroma.
Well-cooking apple varieties are suitable for jam and marmalade. The “Black Prince,” thanks to its tartness, allows you to achieve a rich flavor without excessive sweetness, while the “White Naliv” quickly becomes soft. If you want to make jam with neat slices, it’s better to choose firmer fruits, such as “Idared” or “Granny Smith.”
Juicy apples with a pronounced flavor are especially good for compotes. ‘Melba’ gives the drink a soft fruity aroma, ‘Gala’ adds sweetness, and ‘Granny Smith’ makes the taste fresher. Using several varieties can produce a richer drink in which the sweetness of some fruits is complemented by the tartness of others.
For other homemade preparations, it is worth choosing apples based on the nuances of their flavor. “Korichnoye Polosatoe” adds spiciness, “Medunitsya” is distinguished by pronounced sweetness, and “Grushevka” is ideal for making a fragrant sauce.
