In October, fresh radishes continue to be sold at Moscow fairs. They are brought from the Rostov, Ryazan, Nizhny Novgorod, and Voronezh regions, as well as from Chuvashia. On the shelves, you can find small round and large elongated roots in red and white colors.
Many people are used to considering radishes a spring vegetable: the first bunches appear at the beginning of the gardening season, and in summer the roots are often added to okroshka. However, cool weather and short daylight are just as suitable for this crop, so a fresh harvest is also obtained in autumn. At the same time, summer heat and an abundance of sun can cause bolting — the plant sends up a flower stalk.
The harvesting times depend on the region and the weather. When it is already getting cold in the central part of the country, in the south, under favorable conditions, radishes continue to be harvested from open beds. Different harvesting periods in various regions allow the season to be extended, but the timing of the last harvest is determined by the weather — frosts can occur in the south as well.
“I sow radishes in small batches several times throughout the season. This way, they mature gradually: we harvest one batch, another is still growing. After early potatoes, we use the bed again for radishes — getting a second crop from the same plot. In a warm autumn, we harvest the last almost in winter. The main thing is to watch the weather and harvest before the frosts,” says Alexey Rublev, a regular participant in the Moscow fair in the Central Administrative District of the capital.
When choosing radishes, the first thing to check is their firmness: fresh roots are firm, without cracks or signs of wilting. Small vegetables usually have juicy and crunchy flesh and may have a more delicate taste. However, it is not advisable to rely solely on size, as some radish varieties naturally produce large roots. If the vegetable is overgrown, its taste may become richer and spicier. The shape also depends on the variety—it can be round, oval, or elongated.
The autumn harvest is suitable for various dishes. Radishes can be grated, mixed with sour cream and chopped green onions, and then served with hot potatoes topped with melted butter. Another option is to slice the root vegetable thinly and place it on rye bread with cream cheese. For a radish salad, cucumber, boiled egg, dill, and thick sour cream are also suitable. It is best to dress the dish just before serving to keep the vegetables crisp.
