At the beginning of summer, young zucchinis of various varieties could be found at Moscow markets, which are usually eaten raw. For example, the “Alexandria F1” zucchini is distinguished by its light green fruits, while the yellow-fruited zucchini has a bright color and tender flesh. Closer to the middle of the season, varieties appeared on the shelves that are suitable not only for fresh dishes but also for preserves. The “Aeronaut” variety is noted for good shelf life, while “Malysh” and “Tsukesha” are suitable for various cooking methods.
“The harvest this season was excellent – all varieties were pleasing. ‘Malysha’ was especially praised for its delicate flesh; it was used for pancakes and caviar, while ‘Tsukesha’ turned out to be a real all-rounder: people took it for frying, baking, and storing for winter. It’s nice to see that buyers understand the varieties and know why they choose precisely this zucchini,” shared Valeria Broksh, a participant of the Moscow fair on Bakuninskaya Street (property 24).
Pancakes, caviar, vegetable noodles
In addition to pancakes, caviar, and vegetable stew, zucchini can be used in more unusual recipes. For example, the fruit can be made into vegetable noodles — the vegetable is sliced into thin long strips with a vegetable peeler, quickly fried, and mixed with a sauce made from yogurt, lemon juice, greens, and garlic. Such noodles can be served on their own or complemented with baked fish.
“Before, I only made fritters from zucchini because I didn’t know what else could be done with them. But recently, I tried vegetable noodles using a recipe I heard at the market — it turned out to be quicker than frying fritters,” said Natalia Sokolova, a regular customer of the Moscow market on 1905 Street.
For those who want to preserve the harvest for the cold season, pickling and freezing are suitable. For freezing, zucchini are usually cut into cubes or slices, lightly blanched, and packed in small portions in bags — this way they don’t stick together and are convenient to use in winter for soups and stews. For pickling, zucchini are often canned together with carrots, tomatoes, garlic, and herbs — such a preserve can be used in winter as an independent appetizer or as a complement to other dishes.
