Bread has remained a part of the daily diet for centuries. Meanwhile, bakers continue to experiment with recipes, adding vegetables, spices, and various seeds to the dough. On World Bread Day, celebrated on October 16, we tell you about the products, besides the loaves familiar from childhood, that can be found at Moscow fairs.

For example, on Profsoyuznaya Street (property 41), they sell beetroot-carrot and pumpkin bread, as well as grain bread with turmeric. Vegetables and spices give the baked goods new flavor nuances, but do not necessarily make them sweet. It all depends on the dough composition and the ratio of ingredients. In traditional recipes, the base usually consists of flour and water, whereas in cake dough, there is generally more sugar and butter.

Turmeric grain bread can be paired with soft cheese, beetroot-carrot bread served with vegetable appetizers, and pumpkin bread used for sweet sandwiches. Another option is to prepare a bread platter with several varieties and try them plain to compare the flavors.

Unusual ingredients in bread baking were used long before modern gastronomic trends appeared. Previously, they were added mainly to save flour or to change the properties of the baked goods. For example, at the end of the 18th century in Russia, during grain shortages, boiled potatoes were recommended. This allowed less rye flour to be used, and the finished bread stale more slowly.

Today, potatoes are added to dough to vary the flavor. Such bread, as well as corn and buckwheat bread, are sold at fairs on Matveevskaya (property 2) and Otradnaya (property 16) streets. The supplies are brought from Roslavl and baked on site in a specially equipped oven. Thanks to this, customers can purchase hot bread. Cottage cheese and herbs are offered to add to the potato bread, corn bread is served with soup, and buckwheat bread is served with a cheese platter.

At the fair near the Alma-Atinskaya metro station, there are carrot-pumpkin, wheat, and corn breads available, as well as the unleavened “Old Believer” bread with honey and “Siberian rye” bread with cedar nut flour.

Lovers of classic flavors should pay attention to the fairs on Milashenkova Street (property 14) and Tallinnskaya Street (property 7). Here you can buy wheat, Borodinsky, and whole grain bread.

To keep baked goods fresh longer, they can be frozen. For this, a fully cooled loaf should be sliced and sealed tightly, which allows thawing the bread in small portions.

Products for Moscow fairs are brought from more than 40 regions of Russia. Specialists check them before they are sent to the shelves. the state veterinary service of the capital.

Fair pavilions are located in high-traffic areas and are equipped with heating, ventilation, air conditioning, and video surveillance systems, as well as trading and refrigeration equipment, making them comfortable to visit at any time of the year.

Spaces for fair participants are provided free of charge. More information about cooperation can be found at official website State Budgetary Institution “Moscow Fairs”.
