Demand for cucumbers among visitors to Moscow fairs has not decreased since June. Soil-grown vegetables are brought by farmers from Astrakhan, Volgograd, Rostov, Tula, Tambov regions, and others. The assortment includes dozens of varieties: from familiar salad types to dense and compact ones for pickling. Nearly 100 tons of cucumbers were sold at Moscow fairs throughout the season.
“At the beginning of summer, the salad varieties — ‘Relay’ and ‘Seducer’ — were in demand: people wanted fresh, crunchy cucumbers straight from the garden bed. But as soon as the canning season started, demand shifted to the short-fruited types — ‘Mashenka’, ‘Rodnichok’, and ‘German’. They are more convenient for canning because they are small, firm, even, and fit perfectly into a three-liter jar,” said Pavel Malnev, a participant in the Moscow fair on Zeleny Prospekt.
Cucumber is one of the most popular summer vegetables; it consists of almost 96 percent water, so it refreshes well in the heat, helps maintain water balance, and gently removes excess liquid from the body. It contains potassium, which helps maintain heart and kidney health, as well as antioxidants that protect cells from oxidative stress. At the same time, cucumber is a low-calorie product — about 15 kilocalories per 100 grams.
How to choose cucumbers for pickling
Short-fruited varieties with dense flesh and few seeds are best suited for pickling and marinating. A sign of a proper pickling cucumber is a thin but firm skin with bumps and black spikes: through them, the brine penetrates faster inside, and the vegetable does not become hollow.
Before buying, it is worth paying attention to three things. First of all, the size: the ideal length is 7–12 centimeters, such fruits do not require slicing and are salted evenly. The color should be a rich green, without yellowing — a yellowed vegetable is already overripe and will become soft when pickled. Density is also important — a good pickling cucumber is firm to the touch and does not dent near the stem when pressed.
