At the fish markets “Moscow – on the wave” from August 21 to 23, Atlantic salmon farmed in Murmansk will be offered at a discount. On these same days, you can try it at tastings at 14:00.

The promotion will take place in two markets — in Mitino and Kosino-Ukhtomsky. You will be able to buy fresh-frozen whole salmon from this year’s catch weighing from four to five kilograms with a 20 percent discount.

For three days — August 21, 22, and 23 — tastings will also take place at the fish markets. Visitors will be able to try Murmansk salmon cooked in a convection oven and appreciate its tender texture and juiciness.

How Atlantic salmon are farmed

Fish are bred in sea cages in the cold waters of the Barents Sea. Atlantic salmon is adapted to life in both fresh and salt water. This feature is taken into account during its farming: initially, the juveniles are kept in fresh water, and after adapting to the saltwater environment, they are transferred to sea cages in an open water area. Here, the fish constantly move with the sea currents. Thanks to this activity, they develop firm and elastic fillets with fine layers of fat. Their even distribution creates a marbling effect.

Murmansk salmon fillet is distinguished by a delicate flavor with a slight sweetness. The pink-orange hue is given by astaxanthin — a pigment that the fish obtains from its food. Salmon serves as a source of protein, omega-3 fatty acids, vitamins D and B group, as well as selenium.

How to cook salmon

For the promotion, fresh-frozen whole fish was prepared, which undergoes shock freezing. Rapid cooling helps preserve the structure and beneficial properties. Before cooking salmon, it is better to thaw it gradually by leaving it in the refrigerator for several hours. This way, the fish will lose less moisture and maintain a firm texture.

In addition to whole fish, the markets offer chilled fillets and steaks. They are already cut and are suitable for those who want to start cooking right away.

Whole fish has its advantages: when cutting it up, you can choose the size and shape of the portions, and the head without gills, backbone, and tail can be used for a rich fish broth. Portion pieces are usually baked in parchment with cherry tomatoes, lemon, and aromatic herbs. The fish is lightly drizzled with oil, thyme or rosemary is added, everything is wrapped together with the other ingredients, and sent to the oven for about 12–15 minutes. The parchment holds steam inside, so the flavors and aromas of the ingredients blend well.

Fish broth can be used to make lohikeitto — a traditional Finnish creamy salmon soup. It includes potatoes, carrots, and leek, and towards the end of cooking, pieces of fish and cream are added. Before serving, the soup is sprinkled with fresh dill and allowed to sit for a while under a lid.

The fish markets “Moscow – on the wave” operate in the Kosino-Ukhtomsky and Mitino districts.
